I just finished baking two loaves of zucchini bread. The house smells so good right now. I shredded a lot of zucchini when it was in season & froze it in two cup measurements so it would be easy to make this bread.

Its been a very long time since I made chocolate zuccini cake. Your post reminds me how something so nutritious can taste so good. Wish I could smell your zucinni bread.

When the zucchini is coming in fast and furious in the summer, it's good to have the smarts to process it as you did. I always tell myself (through gritted teeth) how good these things will be in the dead of winter.
I'm with Debbie-we'll be over for a snack!!
